Note
California Olive Ranch, Oroville, CA, 95965. According to Brian Mori at the ranch, “The advantage of this stage is very key to ensuring the quality of our oil. The oil is passed into these tanks according to specific flavor profiles for later blending. The tanks are temperature controlled, stainless steel, and contain a ‘nitrogen blanket’ which prevents oxidation of the oil that degrades quality. This ensures a storage environment to ensure the quality of oil is maintained.” (email, 12/07/09).
